Sweet Potatoes (Ipomoea batatas) in Combating Macronutrients: A Review

ABSTRACT

Sweet potatoes (Ipomoea batatas) are a crucial crop, known for their rich nutritional profile and versatility. This study explores the micronutrient content of sweet potatoes, focusing on essential nutrients like Vitamin A, Vitamin C, iron, zinc, and potassium. It examines bio-fortification and targeted breeding strategies aimed at enhancing these nutrients, particularly through the development of orange-fleshed sweet potatoes (OFSP) rich in beta-carotene. The study also discusses the significance of cultivating sweet potatoes, highlighting their adaptability to various climates, economic benefits, and role in sustainable agriculture. Additionally, the proximate composition of sweet potatoes, including carbohydrates, proteins, fats, dietary fiber, ash, and moisture content, is detailed. This work underscores the potential of sweet potatoes to address micronutrient deficiencies and support sustainable food systems globally.
